When Finca Can Axartell was acquired in the 1990s, there was not a single vine on the 200 hectares of land. They were used by a flock of sheep that grazed around the 40 hectares of olive trees, which are Can Axartell's largest property in terms of area. The age of the olive trees can only be estimated, but experts estimate that many of them are at least 500 to around 1,000 years old. The fact that Can Axartell was already producing wine centuries ago, which was highly prized in the nearby town of Pollença, only became apparent over time. However, it was clear that vineyards had existed in the east of Mallorca, as almost everywhere on the island; in the 19th century there were around 30,000 hectares under vines, almost ten times as much as today. Various winegrowing experts confirmed that the land of the finca should be perfectly suited for the production of wine. As it soon turned out, the limestone soil has a high calcium content. The land of the finca is nestled in a valley on the southern edge of the Tramuntana mountain range. There, the local mountain called Penya Mascorda casts its shadow far across the landscape in the evening. The valley is open in two directions and receives cooling breezes from the bay of Pollença, which is only seven kilometers away. Before the first 2.4 hectare vineyard was planted, the land was deeply plowed, the larger stones were removed and herbs such as alfalfa and marigolds were sown over a period of two years to improve the soil structure and reduce the colonization of nematodes. It was not until the third year that the first vines were planted in well-prepared soil, which has been cultivated organically since the beginning. This was also done for all other vineyards.
